  6. Make a hole in the middle of the potatoes, add eggs & scramble in middle, then fold into potatoes..
  7. Add the fresh spinach at the very end, stirring till wilted. AND DONE!.
  8. I serve it with fresh fruit and OJ and my son loves it. In his words "this is bomb mom" :-D.

Bring to a boil, and cook until just tender. Drain, and cut potatoes into quarters. Breakfast is my favorite meal of the day. I have a feeling I'm in good company! There's a good reason we eat it in the morning, afternoon, and evening – it's delicious!!
